After beginning trading last week, the tiny operation has already developed a sizeable reputation and has forced its owner to consider expanding in the future.
The business is run by Reverence Sourdough, a popular local baking company that has itself been functioning in town for about two and a half years, and provides goods to a number of local bakeries.
However, owner Renee Neale has now decided to start her own mini retail store, which is located at Gunnedah Grounds out the back of W.A. Baxter Solicitors.
Having seen the idea work so well in Sydney, she was keen to bring the concept to Gunnedah and find out how it would be received there, and it's fair to say it has got off to a good start.
"It was fantastic, on Tuesday I sold close to about 80 loafs and I completely sold out and I had people want more," she said.
"On Wednesday I went in and delivered a few orders for people that had missed out and then Thursday I was there again and sold out.
"And then Valentine's Day was wonderful, that's probably the day I was most grateful for because I got a lot of new customers."

Being the size it is, Ms Neale admits it's difficult to meet the demand, with the capacity at Hole in the Wall being around 60 loafs - and given she sold around 200 last week, it takes some back and forth between there and her Reverence Sourdough premises to restock.
Ultimately, she is just pleased that some casual conversations with Gunnedah Grounds owner Amber Donoghue resulted in her being able to capitalise on the vacancy of the minute space. But most of all she is thankful the community appreciates her product.
"It's exciting that a lot of new people embraced it and were happy to do so and give it a try," she stated.
"Because it is an artisan product, it is different to your conventional sourdough."
Hole in the Wall bakery is open on Tuesdays and Thursdays between 11am and 3pm, as well as some Saturdays and Sundays as promoted by Reverence Sourdough's Facebook page.
