Cass and Brendan Urquhart from Coal N Steel are taking over the Conadilly Street business and bringing in their wood fired pizzas and smoked meats.
They have a lot planned for their first stationary business, having had their pizza trailer and cafe trailer in town for some time.
The pair say it's a "scary but exciting" time, and Mrs Urquhart said the thought of buying a business "scared the living bejesus" out of her.
"We're just so used to being free and then circumstances changed and we thought 'let's do it' so we gave up our jobs and now we're going to focus on this, so the shop will be called 'Coal N Steel' because that's our history," she said.
"We lived in coal country and moved to Newcastle which is steel and that's how we got Coal N Steel.
"Someone said 'why? It doesn't even sound like a cafe name' and I said 'it's not about the cafe name, it's about us and our history and journey, and this is where we got to today'."

The business will be open for breakfast, lunch and dinner everyday, and there'll also be events on the weekends, too.
"On Sunday afternoons, we want to do music on the lawn so we'll have bands in ... and everyone parks out on the grass and it'll solely be cheese platters and smoked meats platters," Mrs Urquhart said.
"On Friday nights we'll hopefully get someone in, get the doof doof music, and turn this into a place where everyone can have a really good feed and then they can head off into town.
"Then Sunday morning, turn up as a family, and have a Sunday buffet breakfast like they used to.
"We're still incorporating some of the values of Chatterchinos, but in the same breath, being a takeaway, we want to keep that concept because most of our customers are takeaway."

Mrs Urquhart says they've had lots of great support from the community already.
"I think we've brought so much here already just with the trailers, like we've had over 1000 followers in just four weeks on Facebook just from getting up and running," she said.
"We've taken on board a lot of what our customers have asked for."
They received the keys to the building on Wednesday, and are hoping to be open within two to three weeks.
"It's a place where everyone can hang out all ages and relax. It's going to have that relaxing vibe to it, like as soon as you walk in you feel at home," Mrs Urquhart said.
"I want it to be great and I want everyone to love it as much as we do."
The Urquhart's history
Mr Urquhart grew up in Gunnedah, and lived here until he was about 21.
He then moved up to QLD where he met Mrs Urquhart.
"Basically he brought me down here to meet his family and I fell in love with Gunnedah and wanted to move back down here," Mrs Urquhart said.
First though, they started a business in the Coalfields in QLD about three years ago.
"It was supposed to be a party hire business and we ended up converting a box trailer into a wood fired pizza trailer and started off with that and we got absolutely annihilated out in all the country towns," she said.
"We thought 'nope we've got to go bigger' so the bigger trailer we got built in Sydney and we decided we'd come back down to NSW and give up our mining jobs and do that.
"All different things happened over the last 12 months then we came out here and with COVID we moved back to Gunnedah and started the trailers."
And as the saying goes, the rest is history.
