On Monday, Drovers' Campfire founder Geoff Eather said the committee had "never had to cancel before".
"We made the decision on Saturday afternoon, especially because of the fact that most of our visitors are in the age group that's most susceptible and only one or two of our committee would have to be exposed to be in trouble," he said.
"For quite a few reasons, it made a lot of sense.
"It's just snowballing, what's happening. We're very disappointed with what's happened but certainly, helping our visitors is number one."
Mr Eather said the committee was contacting everyone who had booked in for the event to ask them to consider carrying their reservations over to 2021.

He said the cancellation of the event would hit the community hard because it was used as a fundraising platform for a number of local groups.
"There will be a big impact on the community. The art show relies heavily on people coming to Drovers' to go to that ... it is going to impact pretty heavily on the Lions Clubs because it's a major income source," he said.

On the Quirindi Camel Cup Day 2020 Facebook page, the committee said they had decided to follow the advice of the federal government and postpone the event until further notice.
"The camels will still be coming in 2020 - we are just rescheduling," the post read.
"We share your disappointment as a community and we as a school community feel the same way, however, the protection of everyone's health and safety is of the upmost concern.
"We value your ongoing interest in this wonderful event and thank you for your understanding around issues outside of our control."
Dogs NSW has also cancelled and postponed all shows until April 13.
