The thinking caps have been brought out by Gunnedah shire's restaurant and cafe owners as they begin to develop ideas for a new signature dish.

The aim is to create the Great Taste of Gunnedah food trail through Gunnedah and the villages to encourage locals and visitors to go on a gastronomic journey.
Maverick Bistro has already embraced the idea, coming up with a delicious dessert called Dorothea's Delight.
Restaurant manager Jodi Hayne said Dorothea's Delight is a warm gluten-free choc-hazelnut cake served with homemade dulce de leche ice cream.

Gunnedah Hotel publican Luke Prout has come up with two dishes for the trail, one for the hotel's bistro menu and the other for the Vita Restaurant menu, which will be launching in a few weeks.
"The food trail is a great way of showing that for a small town, Gunnedah take their food seriously. Why shouldn't we? The produce from the area is amazing," Mr Prout said.
The bistro will offer up the Cona-Philly Cheesesteak, a local take on a Philadelphia cheesesteak using beef from Jack's Creek.
Vita Restaurant will serve the Vita Porchetta Italiano every Sunday, which Mr Prout is hoping will be produced by Oakleigh Pasture Pork.
"This Italian classic will be a Sunday fixture at Gunnedah's newest culinary addition. [It will be] perfect for families and groups of friends, using produce the area is proud of," Mr Prout said.
Gunnedah Shire Council's manager communications and cultural services Eliza Gallen encouraged all local restaurant and cafe owners to get on board.
"We would love our food places to join in this trail by creating a signature dish and giving it a creative name that pays tribute to one of our amazing people or places," Ms Gallen said.
"This is a great way to showcase a delicious side to our shire."
